Game progress including your score, coins, devices etc. is only saved to your Galaxy Gobbler Account when you are playing while signed in to your Play Games/Game Center account. You can sign into Google Play Games/Apple Game Center on the settings panel (the button is in the settings menu of the main page). This way your progress won't be lost.
When playing offline and signed out your scores are still saved locally on a device for the current session. Once the session ends, the progress will be reset. After playing a local game, if you sign back into your account the scores will revert back to the last time you played online.
